Baked Prune Compote

Prunes, like many simple foods, are infinitely better if they are complimented with another flavor or two.

1 ½ ounce package of pitted prunes
1 cup raisins or dried cherries
1 cup orange juice
2/3 cup water
Juice of 1 lemon and grated rind (rinds can be left in larger pieces if you prefer)
Juice of 1 orange and grated rind
3" stick cinnamon

Preheat oven to 325 degrees. Combine all ingredients and bake at 325 degrees for 1 hour. Cover and chill for at least two hours. Enjoy for breakfast or as a dessert.
