
Penne in “Meat” Sauce

cups penne pasta, cooked |

cup onion, diced |

tablespoon garlic, minced |
| 1 |
teaspoon extra virgin olive oil |

cup Roma tomatoes, diced |

cup balsamic vinegar |

teaspoon oregano |
| 1 |
teaspoon fresh basil |

teaspoon honey |
| ½ |
teaspoon black pepper |

cup water |
| ½ |
cup texturized vegetable protein (TVP) |

tablespoon tomato puree, no salt added |
Cook pasta according to directions on package. In a large saucepan over low-medium flame, sauté onions and garlic in olive oil until lightly browned. Add Roma tomatoes, increase to medium-low flame and cook for 1 minute. Add vinegar, cook for an additional minute, then mix in spices and honey. Cover and cook 2-3 more minutes. Mix in water, then TVP. Cover for two minutes. Stir in tomato puree, then add pasta and mix well. Serve immediately.
