Nancy's Ambrosia

2 oranges, seeded and sectioned
1 cup pineapple, cubed
1 cup grapes
1 Red Delicious apple, cored and diced
1 cup strawberries, tops removed, sliced
½ cup cream of wheat, cooked
½ cup canned pears
2 teaspoons vanilla extract
2 teaspoons cinnamon
½ cup oatmeal, raw
1 tablespoon honey

Preheat oven to 450. Prep fresh fruit and set aside. Puree cream of wheat, pears, 1 teaspoon vanilla extract and 1 teaspoon cinnamon then refrigerate for at least 30 minutes. Combine oatmeal, honey and 1 teaspoon vanilla extract and 1 teaspoon cinnamon in a small baking pan and toast in oven for 12-14 minutes. Plate the fresh fruit, pour on the puree and sprinkle the toasted oats on top.
