Cucumber & Red Pepper Salad

6 cups cucumber, sliced ½" thick and halved
2 cups red bell pepper, cut into 1" strips
2/3 cup red onion, cut into 1" strips
½ cup red wine vinegar
1 tablespoon lemon juice
½ teaspoon paprika
½ teaspoon extra virgin olive oil
  Freshly ground black pepper, to taste

Combine cucumber, red pepper and red onion. Whisk together remaining ingredients, pour over cucumber mixture and toss. Cover and refrigerate until ready to serve.

YIELD: 6 servings (3/4 cup per serving)
