
Cucumber & Red Pepper Salad

cups cucumber, sliced ½" thick and halved |

cups red bell pepper, cut into 1" strips |

cup red onion, cut into 1" strips |

cup red wine vinegar |

tablespoon lemon juice |

teaspoon paprika |
| ½ |
teaspoon extra virgin olive oil |

Freshly ground black pepper, to taste |
Combine cucumber, red pepper and red onion. Whisk together remaining ingredients, pour over cucumber mixture and toss. Cover and refrigerate until ready to serve.
