8 Cups Bok Choy – chopped
1/2  Cup Leeks – diced
2   Teaspoons Extra-Virgin Olive Oil
3   Ounces Apple Juice
1 Tablespoon No Salt Added Tomato Puree

Sauté the leeks in olive oil over medium heat until slightly browned. Add apple juice and simmer for 3 minutes. Mix in the bok choy and contimue to simmer for 3-5 minutes. Mix in the tomato puree, cook for 30 seconds, remove from heat and let sit another 2-3 minutes.

Makes 4 servings.
