Cup Leeks diced |

Teaspoons Extra-Virgin Olive Oil |

Ounces Apple Juice |

Tablespoon No Salt Added Tomato Puree |
Sauté the leeks in olive oil over medium heat until
slightly browned. Add apple juice and simmer for 3 minutes.
Mix in the bok choy and contimue to simmer for 3-5 minutes.
Mix in the tomato puree, cook for 30 seconds, remove from
heat and let sit another 2-3 minutes.
Makes 4 servings.
