Happy New Year!
For 2007,we have re-negotiated reduced pricing for Rice Diet participants at many local hotels, motels and corporate apartments.
Wonderful things happened in 2006 with some of our favorite accommodations. The Hilton spent $5 million dollars on a total renovation including all the guest rooms, workout room and lobby. The Quality Inn put over $1.2 million into new beds, furniture, painting and carpet at their property and the Millennium plans big renovations in 2007 including new beds.
If you plan to return in 2007, contact Jayne Charles, Rice Diet Program Coordinator to make your clinic appointment and discuss housing options. She can also let you know your Program fees and availability.

Rice House Mushroom Stuffing
Mushroom stuffing is a favorite at the Rice House. It appears regularily on the menu and is featured at our Thanksgiving buffet.
¼ cup EACH red, yellow, green pepper, chopped
1 cup celery, chopped
1 cup onion, chopped
4 mini or 2 regular salt free pitas, coarsely chopped
2 T minced garlic
1 T paprika
½ tsp black pepper
½ tsp dried thyme
2 ½ cups mushrooms (any kind but shitake), coarsely chopped
2 T extra virgin olive oil
Preheat oven to 350 degrees.
Add all ingredients to one large mixing bowl, and mix thoroughly. Transfer ingredients in the mixing bowl to a lightly oiled baking sheet and cover with aluminum foil. Bake at 350 for 45min-1hr. For extra crispy stuffing, remove the foil for the last 15 minutes of baking.
This recipe yields 5 servings.
