Henrietta's Success Story
Over the years, Henrietta B's possessive weight
edged up to the point that her mobility was impaired
and her stamina decreasing rapidly. Five years ago,
her worried daughter found the Rice Diet Program on
the Internet, and Henrietta found herself traveling from
Boston to Durham for a three-month sojourn at the
Rice House.
The 5'4" proud grandmother of fourteen weighed in at
300-plus pounds. Henrietta says that she immediately
felt "faith and accepted" at the Rice House. She
learned that a salt free diet rich in fruits, vegetables,
rice, grains and beans helped her trim 65 pounds that
summer. With the steadfast encouragement from the
doctors and nutritionist, she ate the simple fare, water-
walked and grew stronger by the day. She made a few
good friends with whom she still maintains contact.
In the summer of 2006, having suffered the loss of her
only son, she returned to the Rice House where she
found a measure of comfort and healing in the
company and understanding of the staff and other
Rice Diet participants. She lost many inches and an
additional 26 pounds. She participated in Tai Chi and
learned the proper heal-first walk that strengthened
and improved her gait.
Back in Boston, she's happy to report that she still
consumes a healthy diet, continues to walk and
enjoys the companionship of her family and a group of
long-time friends. After a career in the field of
education, she remains active and serves on two
Boards.
Henrietta plans to return to the Rice Diet Program
annually ... partially because she wants to share her
enthusiasm for the program and process. "This
experience had such a powerful impact on my life that
I truly want to help others."
Meanwhile, she revels in the fact that she still lives
independently, drives and does most of her own
shopping and housekeeping. This vital and engaging
woman has lost more than 100 pounds and
maintained her weight loss over the years. Henrietta
is a youthful 73 years old.

A Way Of Life

The Rice Diet Program, unlike the stereotypical, four-
letter word diet, is much more than a eating
plan that you 'go on and off.' The Rice Diet Program
embraces and teaches a dieta, a word that
comes from ancient Greek, which is a 'way of life' that
promotes health and healing. The longer we 'walk this
talk' with fellow Ricers, the deeper and broader I
realize our healing needs to be to realize the
sustainable results we desire for our health and life in
general.
In addition to the yoga, tai chi, meditation and
journalizing classes, we have increased our
opportunities here to explore the emotional and
spiritual roots that are often the underpinnings of our
physical disease(s). This 'healing at the root' spans
many dimensions, from learning the importance of
eating local, organic foods for our bodies, souls and
planet (thus now serving them at the Rice House), to
digesting the latest brain plasticity and quantum
physics research through lectures, experientials (such
as sessions where we make dream boards) and
thought-provoking movies such as 'What the Bleep Do
We Know', 'The Secret', 'The Future of Food' and Al
Gore's 'An Inconvenient Truth'. Of course, the ultimate
experience is enjoying this with our community here in
Durham, N.C., but you can also enjoy use them to
create your own supportive community at home.
This passion for 'healing at the root' is blossoming
into my next book, and as in my previous books, your
successful healing stories are an essential
component. I'll be telling my 'inner healing' stories,
and those of family members, Ricers and colleagues.
While the latest brain and quantum physics research
is empowering, there is nothing more inspiring than
hearing others share their successful health
achievements, paradigm shifts, and breakthrough
experiences that have facilitated the transformation
they have so long sought. And, there are few things in
life as satisfying and fulfilling as being and co-creating
who and what we want to be and do.
If you have had an 'inner healing', an emotional or
spiritual healing, that has facilitated your physical
healing and catapulted you into actualizing your life, I
would love to hear it. Hearing of your transcendence
from 'trying to diet' to 'manifesting the optimal
dieta,' or way of life, would not only make my
day but may be what inspires thousands of others to

Blueberry, Pear and Walnut Salad Recipe
Blueberry Boost Blueberries are packed
with nutrients and serve as an excellent source of
vitamin C, vitamin K and fiber. According to the USDA,
they are an antioxidant "superfood," ranking second in
total antioxidant capacity per serving out of over 100
common foods tested. Adding blueberries to your
plate can really boost your body's antioxidant
defenses. In addition, Tufts University found that
blueberries may slow and even reverse age-related
brain decline. Blueberries also contain compounds
that may help prevent urinary tract infections, as
discovered by researchers at the Rutgers.

Blueberry, Pear and Walnut Salad
- 5 cups field greens
- 1/2 cup blueberries
- 1 pear, thinly sliced
- 1/2 cucumber, sliced
- Blueberry Vinaigrette (see recipe below)
Blueberry Vinaigrette - 2 Tbs balsamic
vinegar
- 2 Tbs toasted walnut oil
- 1/2 cup blueberries
- Black pepper to taste
Combine all dressing ingredients in a blender and
pulse to puree. Drizzle over top of salad and serve.
This recipe yields two servings. Each serving
contains approximately: 280 calories, 14g fat, 38g
carbohydrates, 8g fiber, 0mg cholesterol, 3g protein,
48mg sodium.
